Koulourakia are incredibly easy to make and perfect for when you want a little something that is not too sweet. My Yiayia always had these yummy butter cookies on hand for when anyone visited her. She would make a big batch and keep them in the freezer to stay fresh. Then, she was able to pull out a few for her guests and she wouldn’t have to rush to make something at the last minute.

Koulourakia
Ingredients
- 2 sticks unsalted butter melted
- 4 eggs 3 for the dough + 1 for egg wash
- 1 cup sugar
- 1 ½ tsp vanilla extract
- 1 ½ tsp baking powder
- ½ tsp salt
- 4-5 cups flour
- sesame seeds optional
Instructions
- Preheat oven to 350°F.
- MAKE THE DOUGH: In a large bowl, mix together the butter, eggs, sugar, vanilla extract, baking powder, and salt until well combined.
- Add the flour about a cup at a time until the dough begins to form. You will know there is enough flour when the dough is able to hold its shape. The dough should be slightly greasy.
- SHAPE THE COOKIES: Using a cookie scoop or tablespoon, scoop out the dough and roll into the shape you like. (ex: Start by rolling the dough into a ball, then a log, finally twist the ends of the log to form an "S" shape.) Place each cookie onto a sheet pan lined with parchment paper. In a small bowl, beat the remaining egg with a splash of water and brush onto each cookie. Optional: lightly sprinkle each cookie with sesame seeds.
- BAKE THE COOKIES: Bake cookies for 15-20 minutes or until golden brown. Set aside to cool completely and serve.
