Koulourakia

These cookies are buttery, slightly sweet, crunchy, yet soft. Perfect for dunking in a cup of coffee or tea, Koulourakia are delightful any time of year, especially around Easter.

Ingredients

  • 2 sticks unsalted butter melted
  • 4 eggs 3 for the dough + 1 for egg wash
  • 1 cup sugar
  • 1 ½ tsp vanilla extract
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 4-5 cups flour
  • sesame seeds optional

Instructions

  • Preheat oven to 350°F.
  • MAKE THE DOUGH: In a large bowl, mix together the butter, eggs, sugar, vanilla extract, baking powder, and salt until well combined.
  • Add the flour about a cup at a time until the dough begins to form. You will know there is enough flour when the dough is able to hold its shape. The dough should be slightly greasy.
  • SHAPE THE COOKIES: Using a cookie scoop or tablespoon, scoop out the dough and roll into the shape you like. (ex: Start by rolling the dough into a ball, then a log, finally twist the ends of the log to form an "S" shape.) Place each cookie onto a sheet pan lined with parchment paper. In a small bowl, beat the remaining egg with a splash of water and brush onto each cookie. Optional: lightly sprinkle each cookie with sesame seeds.
  • BAKE THE COOKIES: Bake cookies for 15-20 minutes or until golden brown. Set aside to cool completely and serve.
