KEY INGREDIENTS

Thin-Sliced Chicken Breasts: Thin-sliced chicken breasts are a time saving hack when it comes to making Chicken Sorrento. With their reduced thickness, they cook faster and more evenly, allowing you to whip up this dish in a fraction of the time. Say goodbye to the hassle of pounding and tenderizing thicker chicken breasts. Thin-sliced cuts are ready to go right into the pan, minimizing prep work, and getting dinner on the table in no time.

Mushrooms: Mushrooms play a crucial role in elevating the flavors of your Chicken Sorrento to new heights. Their earthy and umami-rich profile adds depth and complexity to the dish, complementing the tangy tomatoes and bright herbs. When sautéed alongside the chicken, mushrooms release their savory essence, infusing every bite with an extra layer of deliciousness that will leave your taste buds delighted.

Marinara Sauce: When selecting a store bought Marinara sauce for this recipe, look for high-quality options that prioritize fresh ingredients and authentic flavors. A good marinara sauce should feature ripe tomatoes, fragrant herbs, and a well-balanced combination of seasonings. Choosing a good-quality marinara sauce sets the foundation for your dish, ensuring that the flavors meld well with the chicken and other ingredients. You can find the one I use HERE.

Ingredients

  • 3 lbs thin chicken breast
  • ½ cup flour or gluten free flour blend
  • 3 tbsp Pecorino Romano cheese or dairy free alternative (optional)
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 3 tbsp olive oil divided
  • 1 onion sliced
  • 8 oz white mushrooms sliced
  • 4 cloves garlic minced
  • ½ cup Fontinella cheese or dairy free alternative (optional)
  • 1 jar Marinara sauce

Instructions

  • DREDGE CHICKEN: In a shallow bowl, mix together the flour, Pecorino Romano cheese, salt, pepper, garlic powder, onion powder, and Italian seasoning. Thoroughly coat each piece of chicken in this mixture. Use the palm of your hand to press the mixture into the chicken, so it sticks well. Set aside.
  • HEAT SKILLET: Set a stainless steel skillet to preheat on medium-heat.
  • PREPARE THE VEGGIES: In the meantime, slice the onions and mushrooms and mince the garlic. Set aside.
  • COOK CHICKEN: Once the skillet is heated, add 2 tablespoons of oil and begin to sear the chicken. Cook the chicken for 5-10 minutes or until it is golden brown on each side. When each piece of chicken is finished cooking, set them aside on a clean dish. Continue until all of the chicken is cooked.
  • BEGIN SAUCE: After taking all of the chicken out of the skillet, add the remaining tablespoon of oil. Add the onions and mushrooms and allow them to cook for 5-10 minutes or until they are tender. Be sure to stir occasionally.
  • Next, add the garlic and let it cook for 1-2 minutes or until fragrant. Add the marinara sauce and stir to combine. Reduce the heat to medium-low and place the chicken in the sauce. Allow the chicken to simmer in the sauce for 5-10 minutes.
  • SERVE: Sprinkle the Fontinella cheese over the skillet and allow it to melt. Serve with your choice of sides.
