Chicken Sorrento

- 3 lbs thin chicken breast
- ½ cup flour or gluten free flour blend
- 3 tbsp Pecorino Romano cheese or dairy free alternative (optional)
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Italian seasoning
- 3 tbsp olive oil divided
- 1 onion sliced
- 8 oz white mushrooms sliced
- 4 cloves garlic minced
- ½ cup Fontinella cheese or dairy free alternative (optional)
- 1 jar Marinara sauce
DREDGE CHICKEN: In a shallow bowl, mix together the flour, Pecorino Romano cheese, salt, pepper, garlic powder, onion powder, and Italian seasoning. Thoroughly coat each piece of chicken in this mixture. Use the palm of your hand to press the mixture into the chicken, so it sticks well. Set aside.
HEAT SKILLET: Set a stainless steel skillet to preheat on medium-heat.
PREPARE THE VEGGIES: In the meantime, slice the onions and mushrooms and mince the garlic. Set aside.
COOK CHICKEN: Once the skillet is heated, add 2 tablespoons of oil and begin to sear the chicken. Cook the chicken for 5-10 minutes or until it is golden brown on each side. When each piece of chicken is finished cooking, set them aside on a clean dish. Continue until all of the chicken is cooked.
BEGIN SAUCE: After taking all of the chicken out of the skillet, add the remaining tablespoon of oil. Add the onions and mushrooms and allow them to cook for 5-10 minutes or until they are tender. Be sure to stir occasionally.
Next, add the garlic and let it cook for 1-2 minutes or until fragrant. Add the marinara sauce and stir to combine. Reduce the heat to medium-low and place the chicken in the sauce. Allow the chicken to simmer in the sauce for 5-10 minutes.
SERVE: Sprinkle the Fontinella cheese over the skillet and allow it to melt. Serve with your choice of sides.
